From the Greek \"<strong>strongoulos<\/strong>\", that is, rounded, and \"<strong>prist\u00f2s<\/strong>\" meaning cut, comes out \"strongoulos prist\u00f2s,\" meaning a round cut ball, which perfectly describes the ostrich. By assonance, it later became \"strangolapre(ve)te\" in Greece, because they are able to \"strangle\" those who at the time were considered greedy members of the <strong>clergy<\/strong>.<\/p>\n<p>Other scholars believe that with good probability the <strong>origins<\/strong> are Andalusian, referring to the period of the <strong>spanish domination<\/strong> to <strong>Naples<\/strong>. In the <strong>Southern Spain<\/strong>, in fact, they cook the Andalusian equivalent of struffoli, the <strong>pi\u00f1onate<\/strong>, different from ours mainly because of the more elongated shape of the dough balls.<\/p>\n<p>Beyond which people first handed down this tasty preparation, it is almost assured that it was the<strong> neapolitan nuns <\/strong>to preserve the recipe, preparing them often, even during Christmas, starting the tradition of struffoli in Naples.<\/p>\n<p>This typical dessert is mentioned in an ancient <strong>cookbook <\/strong>as early as 1634, but not with specific reference to the Christmas season. <strong>John Baptist Crisci <\/strong>publishes in Naples the \"<strong>Lucerna de corteggiani<\/strong>\", an extensive collection of <strong>menu<\/strong> for different times of the year-the first true repertoire of products and specialties of the South Central region.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Gli_struffoli_nelle_altre_regioni_italiane\"><\/span>Struffoli in other Italian regions<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>In <strong>Umbria<\/strong>, in the <strong>Brands<\/strong>, in <strong>Molise <\/strong>and in <strong>Abruzzo<\/strong> the struffolo is called <strong>cicerchiata<\/strong>, because the balls tied together with honey resemble the characteristic shape of the <strong>cicerchie<\/strong>, while in <strong>Basilicata<\/strong> and <strong>Calabria<\/strong> is known as the \"<strong>cicerata<\/strong>\". In areas near <strong>Viterbo<\/strong> struffoli are associated with another dessert, the soft dough pancakes that are generally known as the <strong>castanets<\/strong> by <strong>Carnival<\/strong>. A <strong>Taranto <\/strong>are called \"<strong>sannacchiudere<\/strong>\", while at <strong>Lecce<\/strong> \"<strong>purce\u1e0d\u1e0duzzi<\/strong>\", whose name recalls the shape resembling sweet little piglets, also called\u00a0<strong>cunfitti laces<\/strong>, \"<strong>purcidd<\/strong>\" a\u00a0 <strong>Martina Franca<\/strong>; a <strong>Palermo<\/strong>, however, are called strufoli, with a missing \"f\". A <strong>Carloforte<\/strong> at <strong>Sardinia<\/strong> are called \"<strong>jiggers<\/strong>\".<\/p>\n<p>Get them ready for the holidays, too!<\/p>\n<h4><span class=\"ez-toc-section\" id=\"Ricetta\"><\/span>Recipe<span class=\"ez-toc-section-end\"><\/span><\/h4>\n<p>Serves 6:<\/p>\n<ul>\n<li>00 flour 450 g<\/li>\n<li>Eggs 3 whole<\/li>\n<li>Butter 90 g<\/li>\n<li>White sugar 3 tablespoons<\/li>\n<li>White rum or limoncello 30 ml<\/li>\n<li>Grated peel of 1 lemon<\/li>\n<li>Salt to taste.\u00a0<\/li>\n<\/ul>\n<div>\u00a0<\/div>\n<p>For the dressing<\/p>\n<ul>\n<li>Acacia honey 300 ml<\/li>\n<li>Candied fruit: a handful diced<\/li>\n<li>Colored sugar pralines to taste.<\/li>\n<li>Peanut seed oil 1 liter<\/li>\n<\/ul>\n<h5><span class=\"ez-toc-section\" id=\"Procedimento\"><\/span>Proceedings<span class=\"ez-toc-section-end\"><\/span><\/h5>\n<ol>\n<li>Starting with the dough, lean against a preferably wooden surface and sift the flour, add a pinch of salt, the eggs, three tablespoons of sugar and the already soft butter. Also add the rum (or limoncello if you prefer) and the grated peel of one lemon.<\/li>\n<li>Work the dough with a fork, then switch to your hands to make a stretchy, smooth dough.<\/li>\n<li>Wrap the loaf in plastic wrap and leave it in the refrigerator for about an hour.<\/li>\n<li>Then divide the dough into several pieces and start working the pieces into long cylinders, then cut each \"snake\" into rectangles, about 1 centimeter long. If you prefer round balls you can work the rectangles with your hands, otherwise leave them as they are.<\/li>\n<li>Heat one quart of peanut oil in a fairly high frying pan or pot (such as a wok). When the oil has reached the temperature for frying use a skimmer to gently lay the struffoli into the oil a few at a time. Be careful! The cooking times are very short; as soon as they are golden brown, take them out immediately. Of course remove the excess oil by placing them on a plate with paper towels.<\/li>\n<li>Meanwhile, in a pot where the cooked struffoli will also go, start heating the honey.
