It begins with a visit to the company's oil mill, where the stages of olive harvesting are explained, with insights into organic cultivation and the different cultivars. It then continues with an explanation of the various stages of processing-from washing to pressing, from gram milling to extraction-to understand firsthand how a quality oil is created. The activity concludes with a guided tasting, during which notions are provided on the classification of oils and their organoleptic characteristics.
Oil Tour and Oil Tasting with Light Lunch
The experience begins with a visit to the company's oil mill, during which the different stages of the production process are explained, with insights into organic cultivation and the varieties of olives used. Participants will learn about harvesting techniques, both traditional and modern, and observe the stages of processing, from washing to pressing, from gram milling to oil extraction. The activity continues with a guided tasting, during which the criteria for classifying oils and their organoleptic characteristics are explained.
The day ends with a Light Lunch based on farm products, including olive oil, olives and pate, accompanied by oil and tomato bruschettine, Salento bruschettine with ricotta 'scante and anchovy, mixed toast triangles, Salento salad, caprese with mozzarella, tomato and basil, barley frisa a cialledda with vegetable brunoise and the farmer's plate with fava beans and chicory, caramelized onion and croutons. Lunch is accompanied by still or sparkling water, a glass of Masseria Stali wine and coffee.
