Are you a lover of cheese and dairy products? Then you definitely can't miss this special CHEESE CLASS, that will allow you to discover all the secrets of cheese making and much more!

During the course, you will be shown the process, which begins with heating the milk (from goat or sheep) to which rennet is added. Next, you wait for the milk to curdle, thus obtaining different types of cheeses, depending on the season. The mixture is then pressed to remove the whey and placed in special molds, where it will rest for a period ranging from one week to six months.

In winter, you will have the opportunity to process fresh pecorino and ricotta cheese, while in summer you will prepare the cacioricotta cheese.

With patience, we will wait for the milk to reach the ideal temperature to turn into "milky paste", the first stage of cheese making. With the same care and slowness as our ancestors, we will process the dough: we will shape it, roll it, until we give it its final shape. Finally, it will be gently salted to start the ripening process. A small basket of fresh cheese will be prepared especially for you.

At the end of the course, you will enjoy a tasting of our fresh cheeses, , including mozzarella, ricotta, burrata, stracciatella, and fresh or aged cheeses, accompanied by other local products, in a light lunch that will enhance the authentic flavors of the Apulia.

    How to reach the meeting point by car

    From Brindisi station, take Corso Umberto I and Via Cristoforo Colombo. Turn right and enter Via Provinciale S. Vito. Continue for 2 km and enter the SS16 Adriatica. Continue for 15 km and enter Via Annunziata. Turn onto Via San Domenico and Via Sant'Antonio. At the traffic circle take the first exit and enter SP581. After 7 km turn onto Via Gatti/SP581 and continue straight for 700 meters to Via Padula del Cimitero.

    How to reach the meeting point by public transportation

    From Brindisi station walk to Corso Umberto I and turn onto Via Indipendenza. Here take bus 190 to Ceglie Messapica and get off at the Via Moro stop. Continue walking on Via Aldo Moro and turn right onto Via Amati and Via Catullo. Continue on Via Piave, Via Colombo, Via Bari and Via Venezia to Via Padula del Cimitero.
