Beat eggs with sugar, add milk and oil, then incorporate flour and baking powder. Pour the mixture into ramekins and bake at 180 degrees for about 18 to 20 minutes. Once cold, you can decorate them with powdered sugar or colored icing for a cheerful, carnival-like effect.

Creamy and fragrant Neapolitan Migliaccio

The migliaccio is one of the Traditional Carnival sweets, typical of the Campanian tradition. Soft and fragrant, it resembles a compact cake made with semolina and ricotta cheese, which is also easy to make at home.

To make it, you need 500 milliliters of milk, 500 milliliters of water, 200 grams of semolina, 250 grams of sugar, 300 grams of cow's ricotta cheese, three eggs, 40 grams of butter, grated lemon or orange zest, vanilla, a pinch of salt and powdered sugar to decorate.

Bring milk, water, butter and salt to a boil. Pour in semolina by sprinkling, stirring constantly, and cook until thickened. Allow to cool. Separately, process ricotta cheese with sugar until smooth, add eggs one at a time and combine zest and vanilla. Incorporate the warm semolina and mix well. Pour the mixture into a cake pan lined with baking paper and bake at 180 degrees for about 45-50 minutes, until the surface is golden brown. Once cold, dust with powdered sugar.
