At the end of the tour you will taste fresh homemade cheeses with other local products in a light lunch served with a mix of local cheeses, bread, vegetables, tomatoes, olive oil, capers, fresh white or rosé wine

Are you a lover of cheese and dairy products? Then you definitely can't miss this special CHEESE CLASS, that will allow you to discover all the secrets of cheese making and much more!
During the course, you will be shown the process, which begins with heating the milk (from goat or sheep) to which rennet is added. Next, you wait for the milk to curdle, thus obtaining different types of cheeses, depending on the season. The mixture is then pressed to remove the whey and placed in special molds, where it will rest for a period ranging from one week to six months.
In winter, you will have the opportunity to process fresh pecorino and ricotta cheese, while in summer you will prepare the cacioricotta cheese.
With patience, we will wait for the milk to reach the ideal temperature to turn into "milky paste", the first stage of cheese making. With the same care and slowness as our ancestors, we will process the dough: we will shape it, roll it, until we give it its final shape. Finally, it will be gently salted to start the ripening process. A small basket of fresh cheese will be prepared especially for you.
At the end of the course, you will enjoy a tasting of our fresh cheeses, , including mozzarella, ricotta, burrata, stracciatella, and fresh or aged cheeses, accompanied by other local products, in a light lunch that will enhance the authentic flavors of the Apulia.
