Nonna Giosy and her team will be your Personal Chefs! They will teach you all the steps to be able to make tasty, all-Italian dishes. Each course at the pasta factory is preceded by a short tour of the museum, during which you will learn about the production machinery and the history of the oldest pasta-making family in the world.
Ravioli, fettuccine, cannelloni, fusilli, the ever-present gnocchi: in short, you name it!
Let's start with the spinach ravioli ragu sauce. The ingredients are: one egg, 100 g "0" flour, while for the filling 10 g ricotta cheese, 200 g spinach, 50 g grated Parmesan cheese; for the Bolognese sauce you will need 1 clove of onion, 500 g tomato, 150 g carne macinara, oil and salt to taste.
Here in Gragnano, where pasta is an art, we will teach you the ancient art of handmade fusilli.
Each of you will have a smock, the right amount of water and semolina, and the iron to work the dough. The artisanal sauce with which you will season your fusilli will be lovingly prepared by the ancient pasta maker. To make the experience even more enjoyable, there will be a nice glass of wine to sip during the course.
For lovers of meat sauce, even more tempting, however, are the famous fettuccine. You will need: 50 g "0" flour, 50 g durum wheat semolina, one egg; for the meat sauce, on the other hand, salt to taste, oil to taste, one onion clove, 100 g ground meat and 300 g tomato.
We then move on to the ravioli capresi, tempting vegetarian recipe. You will need a coffee pot full of water, 100 g "0" flour, a tablespoon of olive oil, a pinch of salt; for the filling you will need an egg, 100 g sheep's ricotta, 50 g grated Parmesan, marjoram, 50 g mozzarella, salt to taste. For the tomato sauce one clove of garlic, 20 fresh cherry tomatoes, 2 tablespoons olive oil, some basil.
A must-have in Neapolitan cuisine are the cannelloni, unfailing among our classes. You start with 100 gr flour, one egg, 1 tablespoon olive oil, salt to taste, for the filling 150 gr ground meat, 100 gr ricotta, 50 gr Parmesan, 2 tablespoons cooked tomato. To prepare the sauce you will use 1 onion, 1 carrot, 500 gr tomatoes (peeled), 4 basil leaves.
Last but not least, wonderful gnocchi of Sorrento-style potatoes.You will need: 150 g potatoes to boil, 100 g "0" flour, salt to taste; for the sauce 1/2 onion, 2 tablespoons oil, 300 g tomatoes, salt to taste, fresh basil.
