A typical Neapolitan dish
Fried anchovies are one of the typical dishes of the Neapolitan culinary tradition. Also called anchovies 'ndurate and fried(gilded and fried), are an inexpensive dish as they involve the use of an excellent blue fish that is inexpensive and easy to find in fish shops. In addition, anchovies are rich in omega-3 fatty acids and minerals.
It is then an excellent choice for getting children and teens to eat the much-hated fish as well. The recipe is easy and involves few steps and ingredients. However, the important thing is to select high quality raw materials, especially anchovies.
In fact, it is good to buy anchovies that are very large and can be easier to open. If you do not want to waste time cleaning them, you can also ask the fishmonger to remove the bones, guts and head to save time. Fried anchovies recipe
Ingredients for 4 people
500 g anchovies
2 eggs
50 g of 00 flour

If you have not asked the fishmonger to clean the anchovies, you will have to take care of them yourself. To do this, simply gently open each anchovy and remove the bone and entrails. Then you must also remove the head.
At this point open the book anchovies, taking care not to separate them into two parts. Rinse the anchovies under running water, let them drain well and place them in a bowl. Meanwhile, in a bowl beat 2 eggs with a pinch of salt and pepper.
In another dish pour 00 flour and bread the fish. For a crispier, crumblier breading you can also mix 00 flour with durum wheat semolina. Then dip the floured anchovies in the beaten egg.
In a frying pan, heat the peanut oil and put the anchovies in to fry. Turn them occasionally to brown well on both sides. To get a perfect frying an oil with a high smoke point, such as peanut oil, should be used. Then make sure it reaches the right temperature (165°C) by measuring it with a kitchen thermometer.
When they are ready, lift them out and place them on a tray lined with paper towels. To serve the fried anchovies you can lay them on a layer of fresh salad. Those who wish can add lemon as a dressing. Enjoy!
